Two want-to-make/want-to-eat Kugels: crisp, moist and sure to disappear quickly!
Our first is a traditional Potato Kugel. Unlike many Kugels, this recipe is vegan. Mimi Fine’s recipe comes from her great-grandmother, and like her, Mimi hand-grates her kugel—and it is fabulous! We have made this kugel by hand and in the food processor and both are great. A key to the crispy texture is in fully draining the potatoes. Matzah meal, an ingredient in both recipes, is available year round in most supermarkets.
Our second recipe, Three Vegetable Kugel, is crispy and colorful. Lighter than our first potato Kugel, this version retains the savory flavor that makes Kugels so popular. These Kugels are fabulous for any meal, buffet or break-the-fast after Yom Kippur.
