Easiest Miso Soup

Serves 4
7 cups water
2 green onions, green and white parts very thinly sliced
4 ounces mushrooms, very thinly sliced
8 ounces sweet white miso
8 ounces firm tofu, diced
Salt and pepper to taste

Add water to a large pot. Heat until it comes to a boil.

Add the onions and mushrooms and reduce heat to a simmer. Allow vegetable stock to simmer for 5 minutes.

In a bowl, add all the miso and ladle some of the hot stock into the bowl. Whisk until smooth and add back to the pot. Add the tofu and serve.

suggestions
Raw: Warm water to 115 degrees and add onions and mushrooms. Whisk in miso. Omit the tofu.
Allium Free: Substitute ¼ cup fresh parsley or fennel chopped, for the green onions.
Gluten Free: Use gluten free miso.
