Living in France, I fell in love with ratatouille, the classic French dish; it’s a favorite dish at our house now. Ratatouille Tart is a beautiful and delicious variation. This tart makes an excellent appetizer or main course for a vegetarian or vegan, everyday or at a festive lunch or dinner. You can serve it with a green salad for a light and lovely meal. The ratatouille filling can also be served on its own as a vegetable side dish.

 

Summer is a perfect time to enjoy the bounty of summer produce.  The tender eggplant, zucchini and tomatoes make it one of the prettiest savory tarts I’ve ever made.  It’s healthy, delicious and budget friendly.

Laurie Boris told me it was both fun and terrifying to write her dystopian novel, The Kitchen Brigade. There is a long history of these novels, perhaps the most famous is Orwell’s 1984, all grim views of the future.

 

Laurie places her main scenes in the kitchen. She explained, “I liked the focus of the kitchen because of the universality and the comfort it creates. It transcends language and cultural differences. It’s a refuge as well as a hotbed of conflict.” A frightening look at a future we hope will never come.
