
Ildiko's Sweet Red Cabbage and Apples



2 tablespoon butter
1/2 red onion, thinly sliced
1 pound of red cabbage, about ½ medium cabbage, cored and shredded
1/3 cup water
1 apple, unpeeled, cored and diced
2 tablespoons apple cider vinegar
1/4 cup red current or red raspberry jelly or jam
2 teaspoons salt
1/4 teaspoon pepper

Melt butter and add onions. Sauté 2 to 3 minutes.

Add cabbage and water. Bring to boil. Add apple. Reduce heat to medium. Cover and cook for 15 minutes, stirring every 5 minutes.

Add vinegar, jelly, salt and pepper and cook uncovered for 10-15 minutes or until cabbage is soft, stirring occasionally.

Adjust seasoning.
Keep it Vegan: Substitute vegan margarine or oil for butter.
Ready to be Dairy Free: Substitute a dairy free margarine.
Easy to be Allium Free: Substitute ¼ fennel bulb, thinly sliced, for onion.
Make it Diabetic: Use 1/2 tablespoon Stevia in place of sugar and a sugar free raspberry jelly or jam.
