Don't waste the pumpkins!
Don't waste the pumpkins! The day after Halloween, cook up your un-carved pumpkins for breakfast, lunch and dinner! Or buy the small sweet pumpkins on sale this time of year.

Breakfast: Try Pumpkin Pancakes. Purée 1 cup of cooked pumpkin and add to your favorite pancake recipe or mix.
Lunch: Make the comforting 10 Spice Pumpkin Soup with Pumpkin Muffins.
Dinner: Cube a few cups of the pumpkin, roast them and serve on top of couscous with Roast Chicken or Lamb or with a crisp salad for a vegetarian feast. Acorn or butternut squash can be substituted for pumpkin in the recipes.
