Deli turkey Salad

Serves 6

 

4 cups of cooked chicken, chopped

1 cup celery, minced

½ cup mayonnaise

¼ cup chopped pickles

½ cup onion, minced

1 apple, minced, unpeeled

¼ teaspoon salt

¼ teaspoon black pepper

3-4 sprigs fresh parsley, chopped

  1. Combine chicken, celery, onion, pickles and apple.

  2. Add mayonnaise, salt, pepper and parsley.

  3. Stir mixture well, cover and refrigerate for at least one hour prior to serving.

  4. Serve on lettuce leaves with radishes and grape tomatoes or serve with lettuce and tomatoes on a rolls, a wrap or toasted rye bread.

  1. Turkey Tacos: Chop turkey and cut up lettuce, tomato and salsa. Add taco seasoning to the turkey for a great flavor.

  2. Pulled Turkey Hoagie:  Shred turkey. Sauté 1 medium onion sliced, 1 bell pepper chopped  minced and 2 cloves garlic.  Mix in shredded turkey. Add to a toasted bun, spread with Russian dressing.

  3. Chicken Pot Pie: Buy or make a piecrust. In a pot, add 3 cups chopped chicken, your favorite cooked vegetables and seasonings and 2 teaspoons flour. Mix and cook over medium heat until the mixture thickens. Place chicken mixture in crust and use a top crust if desired. Bake for 30 minutes until crust is golden. For gluten free use potato starch in place of flour and a gluten free pie crust.

  4. Chicken Quesadillas: Sauté vegetables of choice, such as bell peppers, onions and mushrooms. Layer tortillas with chicken pieces, vegetables and cheese. Fold and bake about 10 minutes. Top with your favorite salsa.

  5. Chicken Stir Fry: Buy or cut a mixture of vegetables such as carrots, bell peppers, zucchini, snow peas, onions or garlic. Heat a vegetable oil until hot and stir fry the vegetables.  Add bite size chicken pieces and mix.  Add your favorite sauce and stir until thickened. Sprinkle with sesame seeds and serve over rice or Asian noodles.

  6. Chicken Noodle Soup: Add bought or home made broth and cut vegetables such as onions, carrots and celery. Cook until soft. Add chopped chicken and cooked noodles and you have an easy and comforting meal.
