Arroz con Leche: Spanish Rice Pudding

Susan's sister-in-law Maxine loves Spanish food and why not? Her husband José is from Leon in northern Spain, where this recipe is a favorite. 

 

This classic Arroz con Leche recipe is served in households all over Spain. It is rich and sweet with a touch of lemon flavor. While an easy recipe, it does take nurturing for a few hours. But, oh! so worth it. The pudding can be served warm or cold.

 

Leftovers are great for breakfast or midnight snacks! In the region of Asturias in Northern Spain, this traditional dish is served with a crust of caramelized sugar on top.

Serve the pudding while playing dreidel during Chanukah, for a Christmas dessert, or for a great New Year's buffet.
