
Rutabaga Fries
Serves 4-5
2 large rutabagas, peeled
3 tablespoons olive oil
2 teaspoon kosher salt
1/4 teaspoon pepper
3 tablespoons spice mix

Preheat oven to 400 F.

Cut rutabaga into French fry size pieces.

Place cut rutabagas into a zip lock bag or covered dish. Add olive oil, salt pepper and spice mix. Toss together.

Place rutabaga on a parchment lined oven proof-baking sheet. Try to get them on one level, without stacking them. This roasts them nicely. Bake for 30-40 minutes or until the rutabaga is golden and a bit crisp.


Spice Mix
1 teaspoon basil
1 teaspoon oregano
1 teaspoon dried thyme
1 teaspoon dried rosemary
1½ teaspoon granulated garlic
1½ teaspoon granulated onion
1 teaspoon ground coriander
3 tablespoons paprika
1 tablespoon kosher salt
1 teaspoon black pepper
1. In a spice grinder or small food processor, grind the spices together.
2. Store in a closed jar. You can multiply this recipe as needed and increase or diminish the pepper according to taste.


1. Other vegetables, such as turnips, parsnips, or sweet potatoes work well too.
2. Vary the spice mix according to taste.
