For Holiday Entertaining: Build Your Own Muffin Collection with 1 recipe 

Base recipe: Yield 2 dozen

3 1/2 cups flour mixture  (white, white whole wheat, whole wheat)

1 cup sugar

1 teaspoon baking powder

½ teaspoon baking soda

3/4 teaspoon salt

2 beaten eggs 

1½ cup milk of choice

2/3 cup vegetable oil

  1. Stir together flour, sugar, baking powder and salt. Make well in center.

  2. Combine eggs, milk and oil. Add all at once to dry ingredients, stirring until just moistened.

  3. Fill sprayed muffin pan or use paper cup liners. Fill 2/3 full and bake  at 375 for 15-18 minutes.

​Add to base recipe and bake as directed.

  1. Chocolate Chip: Fold in 1 cup semisweet chocolate chips into batter.

  2. Cinnamon-Apple-Raisin:  Add 1 teaspoon ground cinnamon to dry ingredients. Fold in 2 cups chopped apple and 2/3 cups raisins into batter. Bake for 20-25 minutes. While still warm after removing from oven, dip tops into melted butter and then in sugar.

  3. Bran muffins: Add 1/2 cup bran.  Top with a sprinkle of cinnamon and  brown sugar before baking.

  4. Nutty Muffins: Add 1 cup chopped walnuts, pecans or almonds.

  5. Cranberry-Raisin Muffins: Add 1 cup mixed cranberries and raisins. Top muffins with a sprinkle of cinnamon before baking.

  6. Date Muffins: Add 1 cup chopped dates. May also used figs.

  7. Carrot Muffins: Add 1 cup grated carrots, mixed with 1 tablespoon lemon juice.

  8. Lemon-Poppy Seed: Add 2 tablespoons lemon juice, 1 teaspoon lemon zest and 1 tablespoon poppy seeds

  9. Sweet Mashed Potato Muffins: Add 1-cup leftover mashed sweet potatoes. Sprinkle muffins before baking with chopped pecans and ½ teaspoon brown sugar.

Use your imagination and creativity to mix and match and add your own ingredients, keeping to similar measurements. For example, use the same amount of grated zucchini instead of carrots in the carrot muffins. Or add nuts and cranberries to the bran muffins.

Substitutions Tip: Muffins for Everyone! Have a person who needs gluten or dairy free? No problem. Use our hints below.

Vegan: Substitute 1/2 cup unsweetened applesauce for oil and 1/2 cup mashed banana for the eggs in base recipe. Use dairy free chocolate chips in chocolate chip muffins.

Gluten Free: Use gluten free flour in base recipe.

Dairy Free:  Use any dairy free milk, such as almond in base recipe. Use dairy free chocolate chips in chocolate chip muffins.

Diabetic:  Use at least 1 1/2 cups whole wheat flour in base recipe. Substitute ½ cup stevia in base recipe. Use sugar free chocolate chips in chocolate chip muffins, sugar free brown sugar in bran muffins and in sweet mashed potato muffins.
