
Homemade Waffle-Pancake Mix


Bulk version for 15 servings
5 cups all purpose flour
5 cups whole-wheat flour
1 cup yellow cornmeal
2 cups oatmeal
1 ½ cup sugar
½ cup plus 2 tablespoons baking powder
1½ tablespoons salt
3 tablespoons cinnamon
Optional add-ins:
1 cup bran
1 cup wheat germ

1. Mix all ingredients thoroughly.
2. Place in a tightly covered container and store in a cool dry place.

Yield 2 servings
1 cups Pancake and Waffle Mix
1 egg
¾ cup milk of choice or water
1 tablespoon vegetable oil or melted butter
1 teaspoon vanilla

Mix all ingredients together in a bowl.

Make pancakes on a heated griddle or waffles in a preheated waffle iron.

To freeze: Cook until slightly golden. Cool and wrap in between parchment paper or waxed paper in container suitable for freezer.

Put waffles into toaster oven to warm. Put pancakes into microwave to warm.

Make It Vegan: Omit egg. Use a nut, seed, coconut or soy milk. Use oil or a non-dairy margarine for butter.
Good to eat Gluten free: Use gluten free flour and oats, such as Bob’s Red Mill.
Easy Dairy free: Use dairy free milk. Use oil or a dairy free margarine for butter.
So-Soy Free: Use any milk other than soy.
Delish Diabetic: Substitute ¾ cups stevia for sugar
