Cottage Cheese Pancakes
1 cup cottage cheese
1/3 cup matzah meal
3 eggs
1/2 teaspoon salt
1 teaspoon baking soda (kosher for Passover)
Oil or butter for frying

Mix ingredients together. Batter should be thick and lumpy.

Heat up large frying pan with butter or a light vegetable oil. Using a heaping tablespoon, carefully spoon into heated oil. Wait until starts bubbling and then turn carefully.

Drain on towel or paper towels and serve with jam, honey, maple syrup or by their own delicious selves.

Not for Passover: Use all purpose, whole wheat or almond flour
Toppings: Try jam, maple syrup or confectioner's sugar, each sugar free if diabetic.
