Mock Crab Salad
The electricity went out and with it, any thoughts of our chicken dinner. Created this no cook Faux Crab Salad, added a candle--and a great romantic dinner!
1 package surimi, mock crab
1/4 cup mayonnaise
1-2 tablespoon white horseradish
1 tablespoon paprika
1/2 teaspoon celery salt
1/2 teaspoon dried thyme
1/2 teaspoon pepper
Dash cardamon
2-4 tablespoons minced onion
2 garlic clove, minced
1 stalk celery, minced
1/4 cup grated carrot

Chop the surimi into small pieces.

Mix mayonnaise, horseradish and seasonings and put into bowl.

Add onion, garlic, celery, carrot and fish.

Taste and adjust seasoning. Eat immediately or refrigerate.

May serve on a bed of lettuce with matchstick cut carrots and celery, olives and grape tomatoes.
Add more protein: 1 hardboiled egg, chopped
Make it Milder: Use leek or shallots minced in place of onion
Add some Spice: Add a dash of red pepper
Delicious Allium free: Mince a radish in place of onion and garlic.
Keep it Vegetarian: Substitute chickpeas for the faux crab
Other fish options: Try canned tuna or salmon in place of faux crab
