Chanukah Latkes: A New Twist
Read Susan's Foodie Lit review of Stacy Ballis' Out To Lunch
Try a new twist on Chanukah Latkes. While potatoes are the main ingredient, we have an updated version using additional root vegetables which add flavor, texture and lessen carbs!
Traditional toppings for latkes are sour cream or applesauce. A fabulous sweet topping is Chef Lisa's creation: Pecan-Date Chutney.
This Sunday night begins the 8 days of Chanukah. We light the menorah, spin the dreidel and enjoy this festival of lights, one of the earliest battles to ensure religious liberty.
Latkes are cooked in oil to commemorate the 8 days the oil burned in the rededicated Temple in Jerusalem, on the 25th of Kislev in 165 BCE, after the victory of the Macabees.
Latkes are a wonderful addition to any meal or a great evening snack--for Chanukah or at any time!
