Graham Saga
Cooked Apples
Serves 4-6
4-6 apples, tart apples such as Gravenstein or Granny Smith.
1-2 sticks cinnamon
1 cup sugar
2 cups water
2 egg whites, beaten until stiff
½ tablespoon lime juice
2 tablespoons sugar
-
Preheat oven to 425 F (225 C).
-
Peel the apples, slice them in half and cut out the core.
-
Place in a large, shallow pan. Add water so that the apples are just covered. Add a stick of cinnamon (or two) and one cup of sugar for every two cups of water used.
-
Set to simmer on low heat. Once the apples are soft, lift them out and set them to drain.
-
Beat egg whites until stiff.
-
Whisk together lime juice and sugar.
-
Place the apple halves in a roasting pan, hollows upwards. Add a dollop of meringue to each apple. Bake for 3-5 minutes. Serve warm. Recipe easily multiplies, if you have a family the size of Alex and Matthew’s!
