Cooked Apples

 

Serves 4-6

4-6 apples, tart apples such as Gravenstein or Granny Smith.

1-2 sticks cinnamon

1 cup sugar

2 cups water

2 egg whites, beaten until stiff

½ tablespoon lime juice

2 tablespoons sugar

 

  1. Preheat oven to 425 F (225 C).

  2. Peel the apples, slice them in half and cut out the core.

  3. Place in a large, shallow pan. Add water so that the apples are just covered. Add a stick of cinnamon (or two) and one cup of sugar for every two cups of water used.

  4. Set to simmer on low heat. Once the apples are soft, lift them out and set them to drain.

  5. Beat egg whites until stiff.

  6. Whisk together lime juice and sugar.

  7. Place the apple halves in a roasting pan, hollows upwards. Add a dollop of meringue to each apple. Bake for 3-5 minutes. Serve warm.  Recipe easily multiplies, if you have a family the size of Alex and Matthew’s!
