Kristi explained how she came to create this mashed potato cake.“We had a birthday party for my 11 year old daughter, Hannah, the weekend prior to her birthday and had a proper cake then. However, when her actual birthday came along, being a baker/cake decorator, I couldn't NOT make her a cake of some sort! Her birthday dinner request was mashed potatoes and stir-fry, so on a whim, I decided to make her potatoes into a cake!”
