Lentil-Fennel Soup
Marry lentil and fennel and you have an amazingly flavorsome soup. Lentils give the soup a hearty flavor, so warming for chilly days.
Fennel is one of those vegetables that tastes completely different when raw or cooked. The licorice flavor of raw fennel disappears when cooked and adds a deliciously light celery flavor. The soup is filling with a taste that varies with what other veggies you add. You may garnish with some of the pretty feathery fennel fronds.
And don’t thrown away any leftover fennel—save it in the freezer for the next time you make stock.
