Tomato, Eggplant and Zucchini Tart
This tart, sometimes called a Ratatouille Tart, is a great meal in itself or as a scrumptious side with grilled fish, chicken or beef. The pastry crust can be used for other tarts and pies and even for pizza! Use good quality vegetables that allow you to enjoy the flavors.
Appreciate the contrast of the tomatoes, eggplant and zucchini in a soft chewy crust. Individual tarts make a wonderful presentation for a luncheon. Roll out into a rustic fold-over crust for a totally different look. Sprinkle Parmesan Cheese on top for an alternative taste.
