Roasted Eggplant Rigatoni
Thanks to Philip Nicholas, guest blogger, for his fabulous Roasted Eggplant Rigatoni recipe. We made it at our house and we all loved it. My 101 year old mom had 4 helpings! Philip told me, “I like to make this dish a couple of hours before serving to give the flavors time to meld and let the pasta absorb the sauce. Excellent for a summer dinner party, served at room temperature and accompanied by a salad of mixed greens.”
