Melt In Your Mouth Noodle Pudding

Buttery, fragrant, make an extra because this one won't last!

3 large eggs

4 tablespoons butter, softened

2 tablespoons brown sugar

1 pound cottage cheese, with pineapple bits

1/3 cup golden raisins

1 teaspoon vanilla extract

8 ounces thin noodles, cooked according to package directions

 

  1. Preheat oven to 350.

  2. Beat eggs until fully mixed and frothy. Add butter and brown sugar and beat until mixed.

  3. Add rest of ingredients and fold together.

  4. Spray 9” x 13”oven proof baking dish and pour pudding in evenly.

  5. Bake for 1 hour or until the top is golden and the fragrance is enough to bring the entire family into the kitchen!  Let cool and cut into squares.

Substitute Stevia brown sugar for brown sugar, following

measurements on package.

Gluten Free

Use gluten free noodles

Additions

Substitute or add other dried fruit, such as dried apricots, to equal the 1/3 cup raisins.

Cottage Cheese

If you can’t find cottage cheese with pineapple bits or already have plain, use 1 pound cottage cheese with 1 cup pineapple bits, drained
