Thanksgiving Leftovers:
6 Ways to Recycle and Reinvent
-
Turkey Tacos: Cut up turkey, lettuce, tomato, cheese. Add salsa. You may add taco seasoning to the turkey for a great flavor.
-
Pulled Turkey Sandwich with Cran-BQ sauce: Shred turkey and add to a toasted bun. Mix cranberry sauce with your favorite BBQ sauce. Top with Cran-BQ sauce and coleslaw.
-
Mashed Potato and Stuffing Croquettes: Mix equal parts mash potatoes and stuffing. As you shape into patties, dust with flour on both sides. Sauté on both sides in oil or butter until golden.
-
Corn Casserole: Add 2 cups leftover corn to a corn bread mix. Follow directions.
-
Broccoli Soup: Add 1 cup mashed potatoes, leftover broccoli and enough broth to cover. Purée in a blender or with an immerser until smooth. Add more broth to achieve consistency you wish. Heat until warm.
-
Sweet Potato Pancakes: Add 1-1½ sweet potatoes, 1 egg, 1 cup flour, ¾ cup milk or water, 1 teaspoon baking powder, ¼ teaspoon salt. Mix together, adding more liquid if needed to reach proper pancake consistency. Fry in pan with butter or oil, flipping once, until golden on both sides.
