Homemade Nut Milks and Cream

 

Nut milks are a great alternative to dairy and soymilks.

They are also very easy to make at home.

 

Key to making nut milk

The key is to soak your nuts for several hours or overnight in

water and use a basic recipe of 1 cup nuts to 4 cups water

(discard the soaking water and use fresh) for milk and a 1-2

ratio for half and half/cream.

 

You can add vanilla and sweetener to taste if desired.

 

Blend

Add to a blender and liquefy. Then strain through a fine sieve or

nut bag. Store in the fridge and use within the week. Freeze the

nut pulp in a baggy for another time. There are lots of recipes

online that utilize this ingredient, such as muffins or cookies.

 

No time to make nut milk? 

Just add your favorite nuts or seeds to your smoothie with water

as your liquid and purée.  We usually throw in a handful of

walnuts to a morning smoothie and end up with a “walnut milk”

in a jiffy.

 

How to use?

Pictured here is some Brazil nut half and half that we using

as our cream for chai tea and coffee. You can also use the nut

milks in smoothies, with cereal or use in cooking.
