Tomato Cream Sauce-
No Cooking Needed!
Light and quick meals are just the ticket down in Charleston, where the summer days are hot and humid. Even if you're not in the South, a no-cook meal is a treat!
Here's our Tomato Cream Sauce: delicious and fresh and needs no cooking! Use on top of your favorite pasta, lasagna or as part of a base for a soup or salsa. If you really want to keep the kitchen cool, try spiralizing zucchini and adding the sauce for a wonderful refreshing summer meal. Uncooking at its best!
This sauce gets its creaminess from the avocado, its cheese flavor from the nutritional yeast and its savory notes from the fresh garlic. Try it--you are going to love it!
Tomato Cream Sauce Recipe
Yield 2 cups
4 medium tomatoes, quartered
1 clove garlic, peeled
2 tablespoons nutritional yeast
1/4 avocado
Salt and pepper to taste
1. Add everything to a food processor
and blend until smooth. You may also
leave the sauce a little chunky.
2. Season to taste with salt and pepper.
Substitution
Allium Free: Omit Garlic.
