Caramelized Onions 101
Caramelized onions are very easy to make!! The secret is to cook them low and slow. This is the way water from the onions cook out and the natural sugars have a chance to caramelize. That's where the magic happens!!
It's important to use a pan with a large surface area so more onions are exposed to the heat. Also, use more onions than you think because they will reduce down to practically nothing. The end result is very concentrated so a little does go a long way.
Plan on attending to your onions for about an hour. The first 15 minutes need more attention to stirring, but after that you can step away every so often.
You can make the onions earlier in the day or a day or two in advance. They are wonderful on a sandwich, in a dip or anywhere you would use onions. Caramelized onions are that secret ingredient!
Here's how to make them step-by-step.
1. Peel and thinly slice a couple of onions, any variety will work. Set aside and heat a large pan on medium high heat.

2. Add 1-2 tablespoons of oil to the pan and add the onions. Cook on this temperature for 15 minutes get things moving. Stir often and cook until onions reduce half in volume. Turn heat down to medium low.

3. Season with salt and pepper and continue to cook and stir for another 20-30 minutes or until the onions reduce by half again. Turn heat down to low.

4. At this point, the onions should look jammy and taste sweet. Cook For a few minutes longer. Adjust the seasoning if need be and serve. If making ahead, cool onions completely and store in the fridge.
